An incredible mixture of chef, maitre de, sommelier, manager, and dear friend, Sam Zaher provides Lion & Bull with decades of experience in every aspect of the restaurant business. Nowhere more than in the food preparation is this more apparent. Sam pulls together surprising flavors with familiar dishes in both formal and casual settings. Whether you are a regular customer, private party client, or simply a first-time friend to L&B, Sam will guide the kitchen to prepare something you and your guests will not soon forget.
Chef John-Gustin Birkitt
Chef Birkitt came on board at Lion & Bull in March 2009 as the Executive Consulting Chef, and today remains in touch for consultations and the occasional glass of wine! He originally hired and trained the kitchen staff, created the first menu and recipes and had oversight of all changes and recipe suggestions before they became final. He was instrumental in creating the upscale, but traditional and casual fare at Lion & Bull. Together with his wife, Marny, they also selected the wines we offer our patrons. Their wise counsel and knowledge of the restaurant business has been most graciously offered and they have been valuable part of the Lion & Bull team.
